1001 Fondues at the National Assembly<\/strong>\u00a0\u2014 this end of\u00a0the\u00a0year marks an exceptional moment for 1001 Fondues. On November 7,\u00a02025,\u00a0the National Assembly of Quebec proudly highlighted our 40th anniversary<\/strong>\u00a0with an official declaration during a parliamentary session. Mario Asselin, MNA for Vanier\u2013Les Rivi\u00e8res, addressed the\u00a0Quebec Parliament<\/strong>\u00a0to shine a light on our journey, our passion for fondue and entrepreneurship, and\u00a0our deep roots<\/strong>\u00a0in the culinary \u2014 and political \u2014 history of Quebec City.\u00a0<\/p>\n\n\n\n

A Story Rooted in a Legendary Place<\/strong>\u00a0<\/h2>\n\n\n\n

This solemn gesture<\/strong> moves us deeply. Because behind 1001 Fondues lies a founding story that begins in a mythical place: the restaurant Le Chalet Suisse, later known as Au Caf\u00e9 Suisse<\/strong>, located on Sainte\u2011Anne Street in Old Quebec, the historic district of Quebec City. This restaurant was known not only for its legendary Swiss fondue \u2014 it was also a gathering place for the artistic and political elite<\/strong>, frequented by notable figures such as Ren\u00e9 L\u00e9vesque, Jacques Parizeau, Jean\u2011Claude Rivest, Marc\u2011Andr\u00e9 B\u00e9dard, St\u00e9phane B\u00e9dard, Francis Cabrel, Chrystine Brouillet, and many others. <\/p>\n\n\n\n

In his book La tribune de la presse \u00e0 Qu\u00e9bec<\/em> depuis 1960<\/em>, historian Jocelyn Saint\u2011Pierre describes Le Chalet Suisse as an emblematic venue that pulsed to the rhythm of parliamentary evenings<\/strong>. MNAs, journalists, and senior officials gathered there after long sessions at the Assembly, sometimes late into the night. Ren\u00e9 L\u00e9vesque himself recalled in his memoirs the \u201cmoulins \u00e0 m\u00e9m\u00e9rages<\/em>\u201d \u2014 the endless gossip mills \u2014 that spun between Grande All\u00e9e and Le Chalet Suisse. He nostalgically described the \u201cflavourful\u201d moments shared in this iconic place \u2014 whose walls, if they could talk, would tell a thousand and one stories. <\/p>\n\n\n\n

Until the 1980s, Le Chalet Suisse was, for the parliamentary circle, a true crossroads of confidences<\/strong>, rumours, scoops, lively discussions, passionate debates<\/strong>\u2026 and of course, shared fondue<\/strong>. <\/p>\n\n\n\n

Gis\u00e8le Gallichan, a young journalist at the time, remembers spending a good portion of her salary there. She would meet her colleagues at Le Chalet Suisse after finishing her next\u2011day news bulletin, taking advantage of the fact that it was one of the few restaurants still open late in Old Quebec. Its proximity to the courthouse and the Ch\u00e2teau Frontenac \u2014 where many MNAs stayed \u2014 made it a natural meeting point<\/strong>. <\/p>\n\n\n\n

Jean Royer, another witness of that era, also recounts in Saint\u2011Pierre\u2019s book that he regularly ran into a third of the Cabinet there. He even remembers a heated exchange between a minister and a journalist \u2014 an episode that, today, would undoubtedly have gone viral on social media. The consensus was clear: the workday was over, and whatever happened around the fondue pot at Le Chalet Suisse was meant to stay there\u2026<\/strong> <\/p>\n\n\n\n

The Flame Still Burns<\/strong>\u00a0<\/h2>\n\n\n\n

The golden years of Le Chalet Suisse now belong to the past, but the founding flame still burns<\/strong>. That original passion continues to guide our mission: to showcase Quebec<\/strong>\u2011<\/strong>made cheese fondues while celebrating<\/strong> the authentic, artisanal signature of our partners. For us, eating local is also a political act \u2014 one that supports the local economy. <\/p>\n\n\n\n

Today, our fondues are distributed across Canada, both in retail and in the Hotel, Restaurant and Institutional (HRI) sector. We are proud to be the only company in the country offering fresh, ready<\/strong>\u2011<\/strong>to<\/strong>\u2011<\/strong>cook fondues that are lactose<\/strong>\u2011<\/strong>free<\/strong>, free of additives and modified dairy ingredients, and made from 100% Canadian milk. <\/p>\n\n\n\n

Our approach is built on innovative, local collaborations with passionate artisans \u2014 cheesemakers, microbreweries, vineyards, distilleries \u2014 to create unique, gourmet fondues<\/strong> that are unmistakably local. <\/p>\n\n\n\n

During his official declaration at the National Assembly, Mr. Asselin said he was \u201cvery pleased to salute innovative entrepreneurship.\u201d These words hold immense value for us. They resonate as a meaningful recognition of our commitment to \u201cevolving\u201d fondue by weaving together Swiss tradition and Quebec creativity.<\/strong> <\/p>\n\n\n\n
