Because behind 1001 Fondues lies a founding story that begins in a mythical place:&nbsp;<strong>the restaurant Le Chalet Suisse, later known as Au Caf\u00e9 Suisse<\/strong>,&nbsp;located&nbsp;on Sainte\u2011Anne Street in&nbsp;Old Quebec,&nbsp;the historic district of Quebec City. This restaurant was known not only for its legendary Swiss fondue&nbsp;<strong>\u2014&nbsp;it was also a gathering place for the artistic and political elite<\/strong>, frequented by notable figures such as Ren\u00e9&nbsp;L\u00e9vesque, Jacques Parizeau, Jean\u2011Claude Rivest, Marc\u2011Andr\u00e9&nbsp;B\u00e9dard, St\u00e9phane B\u00e9dard, Francis Cabrel, Chrystine Brouillet, and many others.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In his book&nbsp;<em>La tribune de la&nbsp;presse&nbsp;\u00e0 Qu\u00e9bec<\/em>&nbsp;<em>depuis&nbsp;1960<\/em>, historian Jocelyn Saint\u2011Pierre describes Le Chalet Suisse as&nbsp;<strong>an emblematic venue that pulsed to the rhythm of parliamentary evenings<\/strong>.&nbsp;MNAs, journalists, and senior officials gathered there after long sessions at the Assembly, sometimes late into the night. Ren\u00e9&nbsp;L\u00e9vesque himself recalled in his memoirs the&nbsp;\u201c<em>moulins&nbsp;\u00e0&nbsp;m\u00e9m\u00e9rages<\/em>\u201d&nbsp;\u2014&nbsp;the endless gossip mills&nbsp;\u2014&nbsp;that spun between Grande All\u00e9e and Le Chalet Suisse. He nostalgically described the&nbsp;\u201cflavourful\u201d&nbsp;moments shared in this iconic place \u2014 whose walls, if they could talk, would tell a thousand and one stories.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Until the 1980s, Le Chalet Suisse was, for the parliamentary circle,&nbsp;<strong>a true crossroads of confidences<\/strong>, rumours, scoops, lively discussions,&nbsp;<strong>passionate debates<\/strong>\u2026 and of course,&nbsp;<strong>shared fondue<\/strong>.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gis\u00e8le&nbsp;Gallichan, a young journalist at the time, remembers spending a good&nbsp;portion&nbsp;of her&nbsp;salary&nbsp;there. She would meet her colleagues at Le Chalet Suisse after finishing her next\u2011day news bulletin, taking advantage of the fact that it was one of the few restaurants still open late in Old Quebec. Its proximity to the courthouse and the Ch\u00e2teau Frontenac&nbsp;\u2014&nbsp;where many MNAs stayed&nbsp;\u2014&nbsp;made it&nbsp;<strong>a natural meeting point<\/strong>.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jean Royer, another witness of that era, also recounts in Saint\u2011Pierre\u2019s book that he regularly ran into a third of the Cabinet there. He even remembers a heated exchange between a minister and a journalist&nbsp;\u2014&nbsp;an episode that, today, would undoubtedly have gone viral on social media.&nbsp;<strong>The consensus was clear: the workday was over, and whatever happened around the fondue pot at Le Chalet Suisse was meant to stay there\u2026<\/strong>&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"the-flame-still-burns\"><strong>The Flame Still Burns<\/strong>\u00a0<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The golden years of Le Chalet Suisse now belong to the past, but&nbsp;<strong>the founding flame still burns<\/strong>. That original passion continues to guide our mission: to&nbsp;<strong>showcase&nbsp;Quebec<\/strong><strong>\u2011<\/strong><strong>made cheese fondues while celebrating<\/strong>&nbsp;the authentic, artisanal signature of our partners. For us, eating local is also a political act&nbsp;\u2014&nbsp;one that supports the local economy.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Today, our fondues are distributed across Canada, both in retail and in the Hotel, Restaurant and Institutional (HRI) sector.
