Over the decades, Quebec’s beer landscape has transformed. From a market dominated by industrial pilsners like Molson, Labatt, and Black Label, it has evolved into a more refined and diverse culture. Today, enthusiasts seek local craft beers that are rich in flavour and originality. This passion inspired 1001 Fondues to create its Quebec beer cheese fondues, crafted in collaboration with a dozen regional microbreweries. 

Each fondue is the result of countless hours of research and development: exploring new varieties, finding the perfect pairing of cheeses and beers, testing repeatedly, and fine-tuning flavours until achieving perfect harmony. These collaborations not only yield exceptional products but also support local economies, highlight brewing craftsmanship, and celebrate the richness of Quebec ingredients. 

Thanks to these partnerships, 1001 Fondues offers creations that showcase the creativity and boldness of Quebec microbreweries, providing enthusiasts with a tasting experience that is authentic, innovative, and reflective of evolving palates. 

Quebec’s beer products today stand out for their remarkable quality and diversity. Among 1001 Fondues’ greatest achievements is the creation of numerous original terroir cheese fondue recipes, each paired with local craft beer styles — from blondes and reds to IPAs, Kölsch, and more.

Microbrasserie Tadoussac: Triplette (malty blonde) – Region: Haute-Côte Nord 

Triplette by Microbrasserie Tadoussac is a Triple-style beer brewed from a blend of four grains (barley, oats, rye, and wheat) and Quebecois and American hops (Magnum, Crystal, Amarillo). Refermented in the bottle at 8.6% ABV, it stands out with a gentle bitterness and aromas of fruit compote — flavours that 1001 Fondues highlights in its “fondue À la Triplette de Tadoussac.” 

Trécarré Microbrasserie: Kölsch (German blonde ale) – Region: Lanaudière 

Trécarré’s Kölsch, from Saint-Côme, is a 5% ABV German-style blonde ale that’s light and refreshing. It reveals delicate notes of cereal, breadcrumbs, and flowers, with a subtle bitterness. 1001 Fondues showcases it in its “fondue À la Kölsch.”

Microbrasserie Le Presbytère : Mountain Bike (NEIPA) – Region: Mauricie 

Mountain Bike is a 6.2% ABV New England IPA (Hazy), inspired by Vermont and its legendary Heady Topper. Juicy and aromatic, it delivers notes of tropical fruit and citrus, with a soft, refreshing finish — flavours that 1001 Fondues highlights in its “Fondue au fromage À la Bière NEIPA.” 

Microbrasserie Ruisseau Noir : Rousse Poivrée (Red Ale) – Region: Lanaudière 

At 5.5% ABV, Rousse Poivrée is an unfiltered, balanced, and original red ale. Caramel malts and Indian green pepper create a subtle, delightful aromatic experience — one that 1001 Fondues showcases in its “fondue À la Rousse Poivrée.” 

Microbrasserie Charlevoix : Flacatoune (Belgian-inspired blonde beer) – Region: Charlevoix 

Flacatoune, a 7% Belgian-style beer, combines malty roundness with a dry finish. Its fruity and spicy aromas pay tribute to the pioneering women who once brewed at home. 1001 Fondues highlights these flavours in its “fondue À la Flacatoune.” 

Microbrasserie Le Naufrageur : Léonne (Belgian-inspired white beer) – Region: Gaspésie 

Léonne, a 4.5% organic wheat beer, is hazy and aromatic, with notes of citrus and coriander. Its name recalls the legendary ghost ship Léonne from the Baie des Chaleurs. 1001 Fondues brings out these aromas in its “fondue À la Léonne.” 

Microbrasserie Tête d’Allumette : Apache (Smoked Ale) – Region: Bas-Saint-Laurent

Scarlet copper in colour, Apache at 5% ABV offers caramelized roundness from the wood fire, highlighted by smoky accents. Its bitterness blends with notes of apricot, peach, and citrus, carried by an expressive British yeast — flavours that 1001 Fondues showcases in its “fondue À la Bière Apache.”
