Grilled Cheese with Mushrooms and Spinach

Ingredients
  • 1 fondue Chic! au cidre (cider) by 1001 Fondues, 350 g (12 oz.), at room temperature
  • 4 slices of country-style bread, 1.5cm (¾ inch) thick
  • Butter
  • 227 g (8 oz) button mushrooms, sliced
  • 500ml (2 cups) spinach leaves, roughly chopped
  • Salt and pepper
Preparation
  1. Spread one side of each bread slice with raw cheese fondue.
  2. In a skillet, melt the butter over high heat and cook the mushrooms until golden brown. Season with salt and pepper. Add the spinach and cook for 1 minute. Add the remaining cheese fondue and cook until the internal temperature is at least 75 °C (167 °F). Let the mixture cool for 10 minutes.
  3. Distribute the mixture over two slices of bread, keeping the fondue spread on the outside of the sandwiches.
  4. In a non-stick skillet, cook over medium-low heat for 3 to 4 minutes on each side, until golden and crispy. Serve immediately.
