Potatoes au Gratin en Papillote

When it comes to BBQ side dishes, there are endless possibilities for delicious eats. This time, we’re revisiting a classic French recipe called "patates dauphinoises.” Our outrageously decadent version — the Potatoes au Gratin en Papillote — features the delightful fondue Chic! à la Bière (beer). Let’s eat!
Ingredients
  • 1 fondue Chic! à la bière (beer) by 1001 Fondues, 350 g (12 oz.)
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • Leaves from 4 sprigs of fresh thyme
  • 1 kg (2 lb) yellow-fleshed potatoes, peeled and sliced about ½ cm (1/4 in.) thick
  • heavy-duty aluminum foil
  • Salt and pepper
Preparation
  1. Preheat one side of the BBQ to high heat.
  2. Divide the potatoes into 4 aluminum foil papillotes (pouches). Season and add onion.
  3. Prepare the fondue according to package cooking instructions. Add garlic and thyme.
  4. Pour the fondue over the potatoes. Cover the papillotes and seal well.
  5. Cook the papillotes over indirect heat for 20 minutes. Rotate the papillotes and continue cooking for 15 to 20 minutes or until the potatoes are tender.
  6. Option: This recipe is also suitable for baking in the oven. Cooking method: Preheat oven to 190ºC (375ºF). Bake in the centre of the oven for 35 to 40 minutes or until potatoes are tender.
