- 400 g (14 oz) potatoes, with skin
- 80 g (2.5 oz) bacon lardons
- 1 small onion, thinly sliced
- Nutmeg, ground
- 45 ml (3 tbsp.) butter
- Salt and pepper
- In a saucepan of salted water, cook potatoes until tender but not cooked through. Remove from water and allow to cool. Peel potatoes and grate with a coarse-hole grater.
- In a skillet over medium heat, sauté the bacon lardons until lightly golden. Drain on paper towels. Add the sliced onion to the skillet and cook until tender and lightly golden.
- Add the cheese fondue cubes, bacon lardons, and sliced onion to the grated potatoes. Season with salt, pepper, and a pinch of nutmeg. Mix well and shape into patties about 10cm (4 inches) in diameter.
- In a large non-stick skillet, heat the butter over medium heat. Place the patties in the skillet and cook until golden brown, about 5 to 8 minutes on each side. Continue cooking until the internal temperature is at least 75°C (167 °F). Add more butter as needed.
