- 1 fondue Chic! au vin (wine) by 1001 Fondues, snack size, 125 g (4 oz.)
- 45—60ml (3–4 tbsp.) olive oil
- 2 onions, diced
- 4 garlic cloves, minced
- 750 ml (3 cups) celery, diced
- 750 ml (3 cups) carrots, diced
- 675 g (1 1/2 lbs) ground beef
- 15 ml (1 tbsp.) Italian seasoning
- 5 ml (1 tsp.) dried basil
- 5 ml (1 tsp.) dried oregano
- 5 ml (1 tsp.) crushed red pepper flakes
- 750 ml (3 cups) water
- 796 ml (28 oz) canned diced tomatoes
- 796 ml (28 oz) crushed tomatoes, canned
- 2 x 156 ml (5.5 oz) tomato paste
- 2 bay leaves
- 15 ml (1 tbsp.) sugar
- 454 g (1 lb) button mushrooms, quartered
- Salt and pepper to taste
- In a large saucepan, heat the olive oil over medium heat. Sauté the onions, garlic, celery, and carrots, stirring frequently for 10–12 minutes. Add more oil if necessary.
- Add the ground beef, cooking it in large chunks.
- Add all remaining ingredients except the mushrooms. Season with salt and pepper. Bring to a boil, stirring regularly. Reduce to low heat and simmer for 1 hour and 15 minutes.
- Adjust seasoning as needed. Add the mushrooms and cook for an additional 15 minutes.
- Prepare the fondue according to the package cooking instructions.
- Serve the sauce over spaghetti and drizzle with cheese fondue.
