
- 1 fondue Chic ! au gin by 1001 Fondues, 350 g (12 oz.), diced
- 4 ml (1/4 tbsp.) traditional active dry yeast
- 5 ml (1 tsp.) honey
- 200 ml (6 oz + 1 tbsp.) lukewarm water (30 °C/85 °F)
- 330 ml + 170 ml (1 1/3 + 2/3 cup) flour
- 3 ml (1/2 tsp.) salt
- Olive oil
- 250 ml (1 cup) tomato pizza sauce
- 250 ml (1 cup) mozzarella cheese, cubed
- 60 g (2 oz) pepperoni, sliced
- Prepare the sourdough the day before. In a large bowl, dissolve the yeast and honey in water. Add 330 ml (1 1/3 cups) of flour and mix with a wooden spoon until a smooth dough forms. Pour into an airtight container and let rest for 2 hours at room temperature. Refrigerate and let rest for 18 to 24 hours.
- Place the sourdough in the bowl of a stand mixer fitted with a dough hook. Add the remaining 170 ml (2/3 cup) of flour and salt and knead for 10 minutes.
- Generously brush a deep baking sheet, approx. 23 x 33 cm (9 x 13 in.), with olive oil. Place the dough ball on the baking sheet, cover with a damp cloth, and leave to rest for 1 hourat room temperature. Then press the dough with your fingers to cover the bottom of the baking sheet.
- Preheat the oven to 290 °C (550 °F).
- Spread the pizza sauce over the dough. Top with cubed mozzarella and pepperoni slices.
- Bake for about 15 minutes or until the pizza is golden and the edges of the dough are crispy.
