Fondue Cruffins with Pecans and Maple Sugar

Ingredients
  • 1 fondue Chic! au cidre (cider) by 1001 Fondues, 350 g (12 oz.)
  • 10 ml (2 tsp.) traditional active dry yeast
  • 50 ml + 100 ml (1.5 oz + 3.5 oz) water
  • 30 ml (2 tbsp.) sugar
  • 750 ml (3 cups) flour
  • 1 pinch of salt
  • 2 eggs
  • 175 ml (3/4 cup) unsalted butter, at room temperature
  • 150 ml (2/3 cup) crushed pecans
  • 30 ml (2 tbsp.) maple sugar
Preparation
  1. Dissolve the yeast in 50 ml of warm water (38 °C to 42 °C/100 °F to 110 °F) with a pinch of sugar to activate it.
  2. In a stand mixer fitted with a dough hook, combine the flour, sugar, and salt. Add the dissolved yeast, the remaining water, and the eggs.
  3. Once the dough begins to form, add the butter and knead for 5 minutes until the butter is fully incorporated.
  4. Shape the dough into a ball and place it in a mixing bowl. Cover with a damp cloth and let rise at room temperature until it doubles in size, about 1.5 hours.
  5. Roll out the dough to form a rectangle measuring 30 x 45 cm (12 x 18 inches).
  6. Soften the cheese fondue in the microwave for 30 seconds. Spread the fondue over the dough, sprinkle with pecans, and dust with maple sugar.
  7. Roll the dough widthwise, not too tightly, and cut into 12 rolls. Place the rolls on a parchment-lined baking sheet.
  8. Let the rolls rise in a warm place (25 °C to 30 °C/75 °F to 85 °F) until they double in size, about 1.5 hours.
  9. Preheat the oven to 180 °C (350 °F). Bake in the centre of the oven for 30 minutes.
