Chic! Moussaka

When it comes to moussaka, we immediately think of Greece. Although this delight is commonly regarded as a Greek and Turkish specialty, it is actually a traditional dish of the entire Balkan region (Albania, Greece, Kosovo and Romania as well as the Middle East: Syria, Turkey, Lebanon, Jordan, etc.).

Yet again, we've reinvented a recipe just for you! This time around, we did it with a Quebec touch and a slightly smoked ingredient — the delicious fondue Chic! fumée (smoked)!
Ingredients
  • 1 fondue Chic! fumée (smoked) by 1001 Fondues, 350 g (12 oz)
  • 3 large eggplants, sliced to about 1 cm (½ inch) thick
  • ≈ 250 mL (1 cup) flour
  • 60 to 80 mL (1/4 to 1/3 cup) olive oil
  • 2 onions, finely chopped
  • 1 kg (2 lbs) ground lamb*
  • 3 tomatoes, diced
  • 250 mL (1 cup) crushed tomatoes
  • 2 cloves of garlic, finely chopped
  • 5 mL (1 tsp.) dried oregano
  • 5 mL (½ tsp.) ground cinnamon
  • Grated Parmesan cheese
  • Salt and pepper
Preparation
  1. Salt the eggplant slices and place on a rack. Let drain for 30 minutes.
  2. In a large skillet or saucepan, heat a little oil and cook onions for 5 minutes.
  3. Add the ground lamb. Season and cook the meat until no longer pink.
  4. Add tomatoes, crushed tomatoes, garlic, oregano and cinnamon. Bring to a boil and simmer for 30 minutes. Check seasoning.
  5. Pat eggplant slices dry with paper towels. Pour the flour in a large plate and flour some eggplant slices.
  6. In a large skillet over medium-high heat, heat olive oil to cover bottom of skillet. Cook eggplant for about 2 minutes on each side.
  7. Remove eggplant slices and place on paper towels. Repeat with remaining eggplant slices, adding more oil. Set aside.
  8. Prepare the fondue according to package cooking instructions.
  9. Preheat oven to 160°C (325°F).
  10. In an ovenproof dish, assemble the moussaka: half of the eggplants, the Parmesan, the meat sauce, the remaining eggplants and finish with the fondue.
  11. Bake in the middle of the oven for 30 minutes. Increase temperature to 200°C (400°F) and continue baking for 15 minutes.
  12. Let stand a few minutes before serving.

This epic recipe is ideal for dinner parties, for entertaining friends or for introducing children to international culinary specialties. No matter the occasion, Chic! Moussaka is a sure bet!

*You can substitute the lamb with ground beef.

*To make it vegetarian, simply substitute the meat with dices of sautéed tofu.
