
- 1 fondue Chic! au gin by 1001 Fondues, snack size, 125 g (4 oz.)
- Olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 15 ml (1 tbsp.) smoked paprika
- 5 ml (1 tsp.) ground cumin
- 1 ml (¼ tsp.) cayenne pepper
- 398 ml (14 oz) diced tomatoes, canned
- 30 ml (2 tbsp.) tomato paste
- 4 eggs
- 2 Greek pitas, 18 cm (7 inches), grilled
- Chopped parsley
- Salt and pepper
- Preheat the oven to 200 °C (400 °F).
- In a large, oven-safe skillet with high sides, heat the olive oil over medium heat. Sauté the onions for 5 minutes. Add the garlic and cook for another minute.
- Add the diced red bell pepper, smoked paprika, ground cumin, and cayenne pepper. Season with salt and pepper. Cook for 1 to 2 minutes, stirring regularly.
- Add the diced tomatoes and tomato paste. Continue cooking for about 10 minutes, until the sauce slightly thickens.
- Using the back of a spoon, create 4 little wells in the sauce. Crack and place the eggs into the little wells. Cut the cheese fondue into 5 pieces, roughly the same size, and distribute them around the eggs.
- Cook on low heat for about 5 minutes, then transfer to the centre of the oven and bake for 5 to 7 minutes, until the internal temperature is at least 75 °C (167 °F) and the eggs are cooked to your preference. Sprinkle with chopped parsley and serve with the grilled pitas.
