Ingredients

Ingredients for the Meatballs

  • 1 egg
  • 60 ml (1/4 cup) milk
  • 60 ml (1/4 cup) 15% cooking cream
  • 3 slices of crustless sandwich bread
  • 340 g (3/4 lb) ground beef
  • 340 g (3/4 lb) ground pork
  • 1 small onion, finely chopped and cooked in a little butter
  • Cayenne pepper, to taste
  • Vegetable oil
  • Salt and pepper

Ingredients for the Sauce

  • 1 fondue Chic! fumée (smoked) by 1001 Fondues, snack size, 125 g (4 oz.)
  • 30 ml (2 tbsp.) butter
  • 30 ml (2 tbsp.) flour
  • 500 ml (2 cups) rich chicken broth
  • Chopped chives
Preparation

Meatballs

  1. In a bowl, beat the egg, milk, and cream. Add the slices of bread. Let it sit for a few minutes for the bread to absorb the liquid, then mix with your fingers until homogeneous.
  2. Add the ground meats and onion. Season with salt, pepper, and a pinch of Cayenne pepper. Mix thoroughly with your hands.
  3. Preheat the oven to 200°C (400 °F). Brush a baking sheet with vegetable oil.
  4. Shape the mixture into 30 g (1 oz) meatballs and place them on the baking sheet without touching each other. Bake in the oven for 25 to 30 minutes, or until the meatballs are cooked through.

Sauce

  1. In a medium saucepan, melt the butter and add the flour. Cook for a few seconds, then gradually add the chicken broth while whisking with a whisk. Bring to a boil.
  2. Add the cheese fondue and continue cooking, stirring until the cheese is well incorporated and the internal temperature is at least 75 °C (167 °F).
  3. Add the meatballs and simmer over low heat for a few minutes. Sprinkle with chopped chives.
