• 1 fondue Chic! au vin (wine) by 1001 Fondues, 350 g (12 oz.)
• 300 g (2 1/3 cups) flour
• 30 g (2 tbsp.) sugar
• 10 mL (2 tsp.) baking powder
• Pinch of salt
• 3 eggs
• 400 mL (1 2/3 cups) milk
• Butter for baking
• 16 thin slices ham
• Maple syrup
• Salt
1. In a bowl, combine flour, sugar, baking powder and salt.
2. Separate egg whites and yolks.
3. Using an electric mixer, beat egg whites until stiff.
4. Mix the yolks and the milk and gradually incorporate them into the flour mixture until homogeneous.
5. Gently incorporate the egg whites with a spatula, lifting the mixture to keep it as light as possible.
6. In a skillet, melt a little butter over medium-low heat. Pour in about 80 mL (1/3 cup) batter per pancake. When bubbles appear on the surface and the pancakes are golden brown on one side, turn them over. Continue cooking for 1 to 2 minutes.
7. Set aside on a rack or baking sheet. Bake remaining pancakes.
8. Preheat oven to 150 °C (300 °F).
9. To assemble, place 4 pancakes on a baking sheet. Spread half the ham over the pancakes. Top with another pancake, 2 more slices of ham and another pancake.
10. Set aside in the oven. Prepare fondue according to package cooking instructions.
11. Serve pancakes and top with cheese fondue. Serve immediately with maple syrup.
*Slices of ham can be replaced by leftover shredded ham.
Note: For a more spectacular effect, you can arrange 1 plate for 2 persons. That’s right folks, one yummy pancake stack for two!
